The standard fruit pizza recipe always starts with a tube of sugar cookie dough.
But we don’t need to do that, do we?
Nah, not us homesteader folk.
Because we know that whipping up a quick sugar cookie crust from-scratch isn’t nearly as difficult as the manufacturers of tubed cookie dough would have you believe. 😉
Having a solid fruit pizza recipe in your arsenal will serve you well when company is coming and you’re in need of a dessert that feels fancy, but isn’t complicated to throw together.
(That’s pretty much the theme of all of the recipes in The Prairie Homestead Cookbook, by the way. They might feel fancy, but they come together lightning-fast and never use hoity-toity ingredients.)
(P.S. I think that’s the first time I’ve ever used ‘hoity-toity’ in a blog post.)
The thing I love about fruit pizza is that you can use whatever fruit you have lingering in your fridge that your children won’t touch for some odd reason. Because if you slice it up and and put it on a fruit pizza? They’ll eat pretty much anything.
Do You Have to Bake Fruit Pizza in Cast Iron?
Well, no. But why not?
Because it’s a proven scientific fact that cast iron makes everything taste better. And it seriously ups your homestead coolness-factor. Obviously.
Seriously though– if you don’t have a cast iron skillet you can use a baking sheet or 9-inch pie pan instead.
Cast Iron Fruit Pizza Recipe
Makes one 10-inch fruit pizza
Fruit Pizza Crust:
- 1 1/4 cups organic, unbleached, all-purpose flour
- 1 teaspoon aluminum-free baking powder
- 1/4 teaspoon fine sea salt (I like this one)
- 1 stick (1/2 cup) butter, softened
- 1/2 cup unrefined whole cane sugar OR coconut sugar OR regular brown sugar
- 1 egg
- 1 teaspoon real vanilla extract (here’s how to make your own vanilla extract)
- 1/2 teaspoon orange zest (optional)
Fruit Pizza Topping:
- 8 ounces cream cheese, softened (here’s how to make your own cream cheese)
- 2 tablespoons real maple syrup
- 1 teaspoon real vanilla extract
- Fruit of your choice (see below for ideas)
Instructions:
Preheat the oven to 350 degrees.
In a medium bowl, combine the flour, baking powder, and salt. Set aside.
Beat the butter and sugar together until light and fluffy, then mix in the egg, vanilla, and orange zest.
Fold in the dry ingredients until just combined, then press the dough into a greased 10-inch cast iron skillet (see note).
Bake for 12-14 minutes or until the crust is slightly golden and set, but not hard. (I like to err on the side of underbaking– softer is better when it comes to fruit pizza crust.)
Let the crust cool completely, about one hour.
In the meantime, prepare the fruit pizza toppings.
Beat the cream cheese, maple syrup, and vanilla extract until light and fluffy.
Spread the topping over the cooled crust, then top with the fruit of your choice.
Serve immediately.
(You can chill fruit pizza if you like, but it does tend to dry out the crust a bit, so proceed at your own risk.)

Recipe Notes:
- Need fruit inspiration? Try blueberries, sliced strawberries, raspberries, blackberries, sliced grapes, kiwi, sliced bananas, peaches, nectarines, or any combination you can imagine.
- You can also use a 8-inch cast iron skillet for this recipe, although the crust will be slightly thicker
- I almost always double the recipe and make two skillet’s worth of fruit pizza. Because it’s never a problem getting rid of leftovers…

Cornbread!!
I cook EVERYTHING in my cast iron skillets. I even have a set at my daughter’s home to cook in when I visit. She says she doesn’t like them because they are so heavy. I pointed out to her one day how badly she was scorching our evening meal and she said that the pan she was using was old and worn out. Oh boy was it! It was an old teflon-coated metal thingie. I informed her about the dangers of the old teflon being our in food and how crispy (not burnt) everything turns out in an iron skillet. For the next meal, I used iron skillets and she commented on how much more flavourful and evenly cooked everything was….without having to worry about scorching! She learned a little bit of a lesson then. She is trying finally to use them properly after many years. I’ve used my cast iron for 40+ years!! Thanks for the opportunity to add to my collection. If I win, I will pass it on to my granddaughter for her cooking experiences.
That remains to be seen/tasted since I don’t have a cast iron skillet.
Why, cornbread of course! My mother still regularly uses the Griswold skillet she got as a wedding gift in the 1950s.
I have several cast iron skillets. As well as a whole set of cast iron cook ware. I have a couple of griddles, too. I love using them. I do have one skillet that is dedicated to cornbread and I only use it for cornbread. I have one skillet that was my grandmothers. She was born in 1901, and lived to be 101 years and 7 months old.

I know it’s basic but my favorite thing to cook in a cast iron skillet is…. Squash and Onions!! There’s magic when you cook it in a cast iron, where the onions melt down, and the squash becomes this buttery, luscious thing – – even if you haven’t added any butter! Ah – my fav! My favorite thing to cook in a cast iron is…. squash and onions!! I know, it’s basic, but there’s magic in making it in a cast iron. It melts down into buttery luscious deliciousness- – – even if you never added butter! I’m embarrassed to say that I have never used a cast iron skillet in all of my 45 years of cooking. I’m very intimidated by cast iron because I’m afraid I won’t keep it clean properly, or ruin it somehow….
The most fun thing to fix in the cast irons are Cowboy biscuits. These are amazing! Put your dough in and cut the dough and when they come out of the oven they are still cut!! Add a little sugar and cinnamon to the batter and you have cake!!
Hope I win!

I brown 1 lb ground beef in the skillet, add 2 cups cooked pinto beans, add some seasoning. Mix up a batch of cornbread then spread evenly over the meat/bean mixture. Bake in the oven at 350 till cornbread is done, about 15 minutes. Very yummy and quick to make.

I am 72 and my grandmother taught me that cast iron is the only way to cook whether on top of stove or in it. Easy to clean and last forever. It’s hard to say what’s the favorite to cook but I’ll go with fried potatoes and onions, or cornbread cooked with a lid on top of the stove or fried chicken. All yummy.
So, I don’t HAVE a cast iron skillet, so I don’t really have a favorite thing to make – YET! 🙂 I have ‘cast iron cooking’ on my Dreams and Goals List, though, and would love to learn how to make biscuits or roast spices, or vegetables…lots of ideas to try. I think it would be awesome to have a natural non-stick pan that I could use without worrying about the negative health impact on my family.

There has never in my life been anything else that compares to fresh fried eggs in the cast iron skillet.
My favorite thing to make in cast iron is pancakes. Why? Because when I first got my cast iron pan, I was told by a well meaning friend that I shouldn’t throw away my non stick pans because I’d never be able to cook a decent pancake in cast iron without it sticking.
And so, several years later, I still feel a little rush of Glee when I make a perfect pancake in my cast iron pan.
Its a toss up between fried chicken and cornbread in the cast iron. But bacon is great in it too.
I use my cast iron daily. German pancakes are a favorite though.
Whole wheat Apple Cinnamon Pancakes

I love to make crispy hash browns in my iron skillets. I made the fruit desert and it was lovely. There are just two of us now, so next time I will half the recipe and use a smaller iron.
My favorite thing to make in my large cast iron pan is chicken pot pie. One pan recipe. Make a single crust the size of pan, only use milk instead of water, put in freezer while making filling. In cast iron skillet, cover and cook vegetables and chicken in butter and small amount of stock, add remaining ingredients that do not need extended cooking, like frozen peas and corn, herbs of choice, then stir in flour mixed in water, add to pan and stir until slightly thickened. Put on the top crust and bake in 375 oven until crust is done and pot pie is bubbly. I left out details that cooks should know, like scoring the crust, etc.
Basil Pesto Spaghetti, or steak, or upside down pineapple cake, or, or, or… I only cook with cast iron so everything!
Steak…we really cannot afford to go out to a Steakhouse very often so I perfected steak in my cast iron skillet. My hubby loves it and it is so easy! I have using my cast iron skillet since 1962 when I married. Yes that is 57 years ago. I cook in it almost every day!!

Hi Jill,
My favorite thing to make in the cast iron is your recipe for apple puffed pancake. I’ve used others but I keep coming back to your recipe. I’ve already printed out this new one you’ve posted, looks so good I think the kids at FarmWise farm camp are gonna love it. Thanks for doing this!
I am just starting to learn to cook with Cast Iron, so far I love to bake brownies and sausage gravy from Jill’s cook book. Its amazing!
My favorite use is to cook homemade sour dough English muffins on. Nothing works better!
Mexican Cornbread!!
Cornbread, hands down. Generations have literally survived on cornbread, Johnny-cake, journey-cake or whatever your ancestors called it. My Daddy was from The North, Mother from The South (yes, capitalized intentionally, ha!) so there was always disagreement about whether or not to add sugar. But all agreed that a well-seasoned cast iron skillet made it best. It gives that golden manna a crispy crust and tender inside, steaming and just begging for some butter and sorghum or cane syrup…oh man! It’s nearly lunch time and I’m hungry!
I have tried several recipes in my cast iron skillet. I have loved every one of them. I definitely want to learn more. I hardly ever use my other skillets. Just started living the simpler life a couple of years ago and have learned so much and am so much happier. Thanks for all your emails and blogs, I couldn’t have done a lot without your help. Keep up the good work Jill and I will keep on learning.

Wow, so many things! Dutch Baby, corn bread and my fav, bacon & eggs!
Mom used cast iron for every day cooking, she has several pans in her kitchen and so do I. By far the best way I use my cast iron pans is to sear meats for roasts and to get a beautiful even, golden crust on breakfast potatoes with spam – a favorite of my Hawaiian husband. Also I don’t have a comal so I use my iron skillets to make tortillas and even to char my chilies and tomatoes for salsas. Thanks for the great recipe and for the give-away!
My favorite thing to make in a cast iron skillet is a frittata. I’m not able to eat pie crust anymore (and always loved quiche) so making an egg frittata is just perfect. I use whatever veggies I have saute them in the skillet, add in some kind of meat(bacon, sausage, ham) then pour in the scrambled egg along with some kind of cheese and bake for 12 mins or so. The skillet is perfect for making our weekend breakfast! And theres no rules, I never know what will be in it, it’s all according to what veggies I have in my fridge.

I have cooked with cast iron since I was a child, and treasure some of my grandmothers’ pieces. Tried and true and will stay with you forever if cared for properly. Thank you for this opportunity.

Nothing like a cast iron skillet for cooking just about anything. I have a long cast iron fish pan that just barely fits in my oven that I make lasagna in. I’ve made lasagna in that pan that fed a whole women’s softball team. One of the women liked it so much she asked me to make it for her daughter’s wedding dinner. That pan has seen bbq chicken, ribs and roasts, cooked over an open wood fire in my back yard many times over the years. I have cast iron in my kitchen that is over sixty years old and counting. Best wedding gift I ever received.
I use mine to fry in.
