Chocolate Coconut No-Bake Cookies (Dairy-Free)



  1. In medium saucepan, combine coconut oil, coconut milk, and honey
  2. Boil one minute, and remove from heat
  3. Stir in shredded coconut, oatmeal, cocoa powder, vanilla, and peanut butter
  4. Scoop onto a piece of waxed paper, or well-greased cookie sheet
  5. /4 cup of “dough” per cookie-just pat/smoosh into a circle
  6. Allow to cool on countertop about an hour
  7. Once hardened transfer and store in refrigerator
