Soaking, souring, acid medium, phytic acid…

Thank you for these great guidelines and explanations. I’ve attempted sprouted grain breads before and, though tasty, they were dense and heavy. These guidelines offer new hope and encouragement!
I also enjoyed a good chuckle while reading the sourdough suggestions. I dove into making my own sourdough this winter/spring and appreciate your comments — sourdough starter is SO much simpler than most directions (purists or snobs?) make it out to be!
